Vegan brownies

  • 450g digestive biscuits (McVitie’s Light are vegan)
  • 240g dark cooking chocolate
  • 250g margarine, cut into small chunks
  • 170g golden syrup
  • 250g raisins
  • 170g soft brown sugar
  • 3 tbsp cocoa powder
  • 1 tsp cardamom

Finely crush the digestive biscuits in a large bowl. Stir in the sugar, raisins, cocoa powder and cardamom.

Melt the margarine in a large saucepan.  Add the chocolate and stir till just melted.  Turn off the heat and add the golden syrup; stir to mix.  Tip in the dry ingredients and mix thoroughly.

Press into flat-bottomed tins and leave to set. Cut into pieces of the desired size.
