Greek orange Lent cake

  • 225g caster sugar
  • 125 ml olive oil
  • 60 ml rum or brandy
  • grated zest and juice of two oranges
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground mixed spice
  • 1/4 tsp salt
  • 175g sultanas
  • 275g self-raising flour

Line (or grease and flour) a 20 cm cake tin.

Preheat the oven to 180 C/350F/Gas Mark 4.

Mix all ingredients except the flour until the sugar is dissolved.  Add the flour and mix well.  Transfer to prepared tin.

Bake for 30-40 minutes until firm in the middle.  Cool on a rack.  Optionally, sprinkle with cinnamon and icing sugar.
