Date and apple loaf (no-beat version)

This is my original recipe.

  • 1 large orange
  • 120g dried stoned dates
  • 1 medium cooking apple
  • 120g plain wholemeal flour
  • 1 tsp baking powder
  • 30g cocoa powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1 tsp nutmeg
  • 1 1/2 tsp mixed spice
  • 1 tsp salt
  • 180g soft brown sugar
  • 2 eggs
  • 120 ml vegetable oil

Grate the zest from the orange.  Set aside.

Squeeze the juice from the orange.  Put in a small saucepan with the dates and stir constantly over a very low heat until the mixture is more or less homogeneous (it should look a bit like stewed apple, but slightly darker in colour).  Do not let the mixture boil.  Leave to cool.

Peel, core and slice the apple.  Stew with a very little water until soft.  Leave to cool.  Put through a sieve (optional).

Preheat oven to 160 C/325 F/Gas Mark 3.

In a medium sized bowl, mix flour, baking powder, cocoa, salt and spices.  Add sugar, stewed apple, dates in orange juice, orange zest, eggs and oil; stir to combine.

Pour the batter into a silicone loaf pan and smooth with spatula.

Bake for about 1 1/2 – 1 3/4 hours or until cake tester comes out clean.
