Apple spice cake (no-beat version)

This is my own original recipe, developed from a basic no-beat cake and my mother’s apple spice cake.

  • 2 medium cooking apples
  • 120g plain wholemeal flour
  • 1 tsp baking powder
  • 40g cocoa powder
  • 1/2 tsp ground cinnamon
  • 1 tsp mixed spice
  • 1 tsp nutmeg
  • 1 tsp salt
  • 180g soft brown sugar
  • 60g raisins
  • 60g sultanas
  • 2 eggs
  • 120 ml vegetable oil
  • 1 tbsp demerara sugar

Peel, core and slice the apples.  Stew with a very little water until soft.  Leave to cool.  Put through a sieve (optional).

Preheat oven to 180 C/350 F/Gas Mark 4.

In a medium sized bowl, mix flour, baking powder, cocoa, salt and spices.   Stir in the dried fruit.  Add sugar, stewed apple, eggs and oil; stir to combine.

Pour the batter into a silicone loaf pan and smooth with spatula.  Sprinkle the demerara sugar over the top.

Bake for 50-60 minutes or until cake tester comes out clean.
