Damson gin

Take a wide-mouthed jar and half fill it with damsons which have been pricked with a fork or sharp knife.  Add 300g of sugar for each kg of fruit, then add gin to cover.  Put the lid on the jar, shake the jar weekly until the sugar has dissolved, taste and add more sugar if desired.  The damson gin may be ready to drink at Christmas but will improve with keeping.
